Rice Cheese and Onion Pie

A pie with a twist!

Ingredients

1 1/4 cups cracker biscuit crumbs 2 sliced onions 2 cups boiled rice 2 eggs 1 1/4 cups grated cheese 1/2 diced tomato 1/2 cup melted butter 1 cup milk 2 tsp chopped parsley Salt and pepper

Seasoning

Use your imagination! Try curry powder, paprika or bush flavours like lemon myrtle, native thyme etc.

Method

  1. Beat the eggs and milk together.   
  2. Combine all other ingredients and put into a 20cm greased pan.   
  3. Bake at 170 degrees celsius for 45 minutes.
