Native Australian Honey and Fig Biscuits
Great tasting biscuts using native Australian products.
Ingredients
¾ cup castor sugar
125 g butter
2 large eggs
¼ tsp ground Lemon Myrtle
½ cup honey – infused with lemon myrtle essential oil
2 2/3 cups plain flour – sifted
1 ½ tsp baking powder
3 tbs milk
1 cup finely chopped dried figs
½ cup desiccated coconut
Method
- Pre heat oven to 180°.
- Grease baking trays.
- Cream butter and sugar together until pale and fluffy.
- Add eggs one at a time, ground lemon myrtle and lemon myrtle infused honey.
- Mix well. Sift in flour and baking powder together then add milk.
- Fold in figs and coconut.
- Drop spoonfuls into the tray, allowing room to spread.
- Bake for 10 minutes.

Remove from oven and allow to cool on tray.
